Description
Our Italian veal sausage is made with coarse ground veal trimmings off our topside, loin and rib joints, blended with soft beef fat and seasoned with chilli, fennel, garlic, cracked black pepper and white wine inside a natural hog casing. Each sausage weighs approximately 125g.
We do not use rusk or filler in most of our sausages, only tapioca starch in order to absorb and hold in the fat and moisture.
