Osso Buco is veal shin, on the bone. Literally translated as “bone with a hole,” Osso Buco is used to make the eponymous traditional Italian dish. Typically, the veal shin is divided, in order to allow the delicious marrow in the centre to be absorbed into the juices of the stew. The process creating rich, tasty, and comforting dish, with soft veal. As for portion sizes, we suggest allowing at least 350g of Osso Buco per portion.
