Buy your piece of Notting Hill Fish and Meat history, and a piece of meat art, with your share of this stunning Dexter body of beef. As seen in our in-store Himalayan salt chamber, this carcass has been hanging since Thursday 12th November, 2 days after it was slaughtered. It is now undergoing the critical process of dry aging: controlled decomposition of the meat that increases tenderness and concentrates flavour for the ultimate in beef eating.
We are offering the exclusive opportunity to purchase your share of this carcass. Our head butcher Tom Cripps and his team will breakdown 1 side of this carcass at the end of the year, and curate and prepare 4 boxes of cuts and products that reflect modern butchery and the nose-to-tail movement. Alongside your cuts of beef will be other products made in our production kitchen by our team of chefs. Think beef wellington, bone broth, rendered beef fat. Nothing will go to waste.
As the first body of beef to hang in our salt chamber, we think this is a special moment and a special bit of beef. We therefore want to offer half of it "box style" to the real beef lovers, to embrace the fullness of whole carcass butchery. Treat yourself or somebody else to a meat feast, to eat fresh or freeze, just in time for Christmas, with our Dexter beef hamper.
The exact content and weight of your hamper will only be fully determined after cutting but will include some or all of the following:
Braising cuts: shin, brisket, chuck
Steak cuts: ribeye sirloin, rump, flat iron/Denver, flank/skirt
Roasts: topside, silverside
Other: Dice, burger, bone broth, beef dripping
